Lemon & Blueberry Cake

Hi again!

Today, as it was a quiet Sunday (the only quiet day of the week for me!), I thought I would do a bit of baking and blog about it. You all know that I'm all for the easy, little-hassle bakes, so I came to the conclusion that a loaf was spot-on.

So, without further to-do, here's the recipe:

• 170g brown sugar
• 170g self-raising flour
• 3 eggs
• 1 tsp baking powder
• 170g butter
• A couple of blueberry handfuls
• Zest of a lemon

1. Line a loaf tin with greaseproof paper; switch the oven on to 180ÂșC.
2. Combine the eggs and sugar, before adding your three eggs and mixing.
3. Add in the flour and baking powder, before grating the lemon and adding the zest, along with a couple of blueberry handfuls.
4. Pour mixture into your loaf tin; place in the oven and leave for around 30-40 mins, or until a skewer placed in the centre comes out completely clean.
5. Leave to cool for around 45 minutes-1 hour.
6. Dust with icing sugar and enjoy!
